I never make biscotti! I really have no idea why though. I grew up eating an Eastern European version of biscotti called mandelbroit that my Savtah would cover in cinnamon and sugar. So how could I NOT make my own, right?!? I will have to email my aunt for my Savtah’s recipe but in the meantime, let’s try something a little different. I found a fantastic recipe on Something Swanky for red velvet biscotti made with red velvet cake mix and I felt so inspired. What other biscotti flavors could I make using cake mix? I perused the baking aisle at my local grocery store and found the Duncan Hines Banana Supreme. Need I say more? I am definitely trying the spice cake mix yet. The possibilities are seriously endless!
Chocolate Banana Cake Mix Biscotti
makes 3-4 dozen cookies, recipe adapted from Something Swanky
1 box banana cake mix (I used Duncan Hines Banana Supreme)
1 cup all-purpose flour
1/2 cup unsalted margarine, melted
1 tsp vanilla extract
8 oz chocolate, chopped
I combined the banana cake mix, flour, melted margarine, eggs and vanilla extract in a large bowl and blended with a spatula. I had to really work the dough to combine it since there are alot of dry ingredients to mix with very little wet.
I divided the dough in half and shaped into two 12×2 inch logs. I placed the logs on a baking sheet lined with parchment paper.
I baked the biscotti at 350 degrees for 30-35 minutes, until lightly brown.
I cooled the cookies on the baking sheet for 15 minutes then cut the logs into 1/2 inch slices. You can cut your cookies as thin or as thick as you want. Be careful with the cookies since they can get a bit crumbly.
I arranged the sliced biscotti on the baking sheet, side up.
I baked the biscotti for 10 more minutes then cooled completely. I prepared a second baking sheet with a clean piece of parchment paper. I melted the chocolate in the microwave (30 seconds at a time until melted) then poured some of the chocolate in a cup. I dipped each cookie half way into the chocolate and let the excess chocolate drip off.
I placed the chocolate dipped biscotti on the clean parchment paper and set them aside until the chocolate hardened.
Time to devour. Man, I love cake mix!

- 2 eggs
- 1 tsp vanilla extract
- 8 oz chocolate, chopped
- Combine cake mix, flour, melted margarine, eggs & vanilla extract in a large bowl and stir until blended.

- Melt the chopped chocolate in the microwave for 30 seconds at a time until melted. Pour the chocolate into a tall cup.
- Dip the biscotti half way in the chocolate and place on the clean parchment paper.
- Set the biscotti aside until the chocolate sets.
