The title pretty much says it all. Maple peanut butter, sunflower seeds and corn flakes all wrapped together in a perfect little salty and oh so sweet bite! And don’t forget the chocolate drizzle. Oh, that wonderful chocolate drizzle. Be still my heart! For me, it all started with the “HolyCrapTheseAreAmazing” cookies on stickygooeycreamychewy.com. Wow, that’s a mouthful…literally! Not only did they look insanely delicious, but Susan (a professional writer, food columnist, recipe developer, wife, mother, daughter and sister, who used to be a lawyer in a previous life) used her gift of gab and sucked me right in to the “mind-blowing awesomeness” of these cookies. How could I NOT try them?!? And how can YOU not try them?!? I changed things up a bit (as usual) with creamy maple peanut butter and lots of salty sunflower seeds. I was hoping to tame the super sweet snack in to an almost-savory submission. Wow…I’ve been reading too much ’50 Shades’ lately.  The cookie remained sweet because of all the sugar and corn syrup (don’t tell my diabetes) but I love the salty addition of the seeds. Yum! Try these. I dare you not to.

Maple PB & Sunflower Seed Corn Flake Bites
makes around 3 dozen cookies 

1 cup sugar
1 cup light corn syrup
6 cups corn flakes cereal
1 cup salted sunflower seeds
1 jar (16 oz) maple peanut butter (you can use any type of peanut butter you want, crunchy or smooth)
1/4 cup chocolate, any kind you like

I combined the sugar and corn syrup in a saucepan and placed it over medium-high heat. I stirred the mixture until it came to a full boil, around 5 minutes. I removed the sugar mixture from the heat and stirred in the entire jar of maple peanut butter.

I mixed together the corn flakes and sunflower seeds in a large bowl.

I poured the peanut butter mixture over the cereal and mixed very well.

With a tablespoon, I scooped out the sticky cereal mixture, forming bite size balls with my hands, and placed them on a cookie sheet lined with wax paper.

I chopped up dark chocolate, placed it in a bowl and melted it in the microwave for 30 seconds. I stirred the chocolate then placed it back in the microwave for another 30 seconds. I gave it another stir and the chocolate was ready! I poured the shiny melted chocolate in a plastic sandwich bag, cut off a tiny corner of the bag and drizzled the chocolate all over the cereal cookies. I let the chocolate set and then I scarfed them down!

Chewy, sweet, salty, chocolaty and OH. SO. GOOD! I need to remove these cereal cookie bites from my house as soon as humanly possible. I can’t stop eating them! I think I might need “HolyCrapTheseAreAmazing cookies” rehab!

  • ¼ cup chocolate, any kind you like

Instructions

  2. Remove the sugar mixture from the heat and stir in the entire jar of maple peanut butter.
  3. Separately, mix together the corn flakes and sunflower seeds in a large bowl.
  4. Pour the peanut butter mixture over the cereal and mix very well.
  5. With a tablespoon, scoop out the sticky cereal mixture, forming bite size balls with your hands, and place them on a cookie sheet lined with wax paper.
  6. Chop the dark chocolate, place it in a microwave-safe bowl and melt in the microwave for 30 seconds. Stir the chocolate then place it back in the microwave for another 30 seconds. Stir one more time and the chocolate is ready!
  7. Pour the melted chocolate in a plastic sandwich bag, cut off a tiny corner of the bag and drizzle the chocolate all over the cereal cookies. Let the chocolate set for 10-15 minutes then devour.
