AT LAST! For the last few weeks, I’ve been spending a lot of time perfecting my non-dairy caramel recipe and I’ve finally done it! I’ve created a chocolate covered caramel with absolutely no dairy that is creamy and delicious. So I decided I should share my caramels with the world and I hope you enjoy them as much as I do! CARA-MEL’S by Kitchen Tested will be launching in just a few weeks but in the meantime, I thought I could show you what I’ve been up to.

At my book club meeting last night, I brought a few of my CARA-MEL’S so my friends could taste them and give an honest opinion. Immediately, I received my first order! I was so shocked and flattered. I mean, I don’t even have my packaging yet and I’m already taking orders?!? So this morning, I woke up very early and chose to make the caramels instead of getting on the elliptical. Definitely the right choice! Since my friend told me to just use my best judgement with flavors, I chose to make 16 salted CARA-MEL’S and 16 peanut butter CARA-MEL’S. All were dipped in rich and smooth dark chocolate from Breezy’s and I sprinkled on a whole bunch of fun toppings; pretzels, honey roasted peanuts, raw pecans, cinnamon, brown sugar, graham crackers, etc. I would have loved to make some caramel with crushed peppermint but my friend is pregnant and just the thought of peppermint makes her sick. Maybe next time…
