I got this idea from Better Homes and Gardens and changed it up to accommodate my husbands taste and kashrus.
1 lb Morning Star Farms Veggie Crumblers (soy meat- a staple in my house for non meat eaters…me J )
any variety of veggies – onions, mushrooms, squash, etc
1 (15 oz can) tomato sauce (or marinara)
1 bag mozzarella/cheddar mix shredded cheese
spices- salt, pepper, garlic powder, red pepper flake
store bought or fresh pizza dough
I sauté onions, mushrooms, and peppers in 2 tsp evoo, add the (frozen) veggie crumblers, add spices (salt, pepper, garlic powder, red pepper flake) and then place the meat/veggie mix in a casserole dish (or foil pan, whatever you have) … sprinkle cheese on top and then with a cookie dough ring (circular) I cut out circles of store bought pizza dough (Trader Joes is fine, I use my local pizza shops fresh dough) and place on top of meat and cheese…sprinkle the cheese on top of dough and bake for 30 min at 400 degrees .
