Lately, I’ve been getting a lot of requests from friends for easy weekday recipes and I am chock-full of them. You wouldn’t know it from Kitchen Tested, but most days of the week I like to make simple dishes or eat leftovers. So I thought it was time I shared one of those recipes on my blog for the world to see. But it can’t just be any recipe, right?!? I mean, chicken dipped in Italian dressing and coated in bread crumbs just isn’t very adventurous, although it is delicious. So feast your eyes on the most delicious and easy slow-cooked chicken you will ever eat!

Brown Sugar Candy Chicken

6-8 skinless chicken thighs, on the bone
1/2 cup brown sugar
1/4 cup lemon-lime soda (I used Diet 7-up)
2/3 cup white wine vinegar (you can also use regular wine vinegar, but I prefer white wine)
3 cloves of minced garlic
2 Tbsp lite soy sauce
1 tsp ground black pepper

I placed the chicken in the crock pot and covered it with brown sugar, pepper, garlic and soy sauce. Then I added the vinegar and soda. Nice and bubbly! You’ll notice in the pictures that I used a crock pot liner. When I’m cooking during the week, the last thing I want is a lot of dishes and the liner ensures easy clean up! Don’t worry, it won’t affect the outcome of the chicken.

I covered the pot and cooked on low for 9 hours. You can also cook on high for 4-5 hours if you start the chicken later in the day. But it was great to start my day by making dinner and then just forgetting about it. Check out the progression of the chicken…

The skin on this chicken is gorgeous! It turns a dark golden brown and without any skin, every bite is filled with the sweet candy flavor of the brown sugar, garlic and soy sauce. Yum!

And on the inside is the most moist and juicy chicken you will ever have. You won’t even need a knife! Even the chicken bones fall apart. I hope you give this a try! Oh, and don’t forget to savor the liquid. I poured mine over brown rice, but you can use yours on literally anything!

Ingredients
  • 6-8 skinless chicken thighs, on the bone
  • ½ cup brown sugar

  • ⅔ cup white wine vinegar (you can also use regular wine vinegar)
  • 3 cloves of minced garlic
  • 2 Tbsp lite soy sauce

Instructions
  1. Place the chicken in the crock pot and cover it with brown sugar, pepper, garlic and soy sauce.
  2. Add the vinegar and soda.
  3. Cover the pot and cook on low for 9 hours or high for 4-5 hours.
  4. Done!
